Fresh Corn and Avocado Salsa


My husband's aunt served this once when we had dinner at their place and I had to get the recipe from her! It's perfect to make when you have tomatoes growing in your garden. 

This is all you need. Not much! Plus a bag of yummy tortilla chips too of course;-)


Mix up the Italian dressing packet according to directions.


Chop up your tomatoes.


Cut up your cilantro and add it to your tomatoes. 


Drain the juice out of the can before adding corn. 


Chop up your avocadoes.

Pour dressing over vegetables. Stir.


Put in the fridge for a bit. When ready, eat with tortilla chips. Enjoy! 



Recipe:

Fresh Corn and Avocado Salsa

3-4 Tomatoes
2 avocadoes
1 bunch cilantro 
1 can sweet corn (drained)
1 pkg. Dry Zesty Italian salad dressing mix (make as directed on pkg.)

Mix all ingredients together. Serve with chips.

Creamy Marshmallow Peach Pie


I LOVE peach season! It's a little stressful trying to find time to pick them and bottle them and make jam and freeze them....etc. However, peaches are one of my FAVORITE fruits and although we have oodles of cut up frozen ones in our freezer, we only get fresh ones during peach season. I'm always trying new recipes but we have our staples. During peach season, this is one of them! 

This is all you need!


Place 18 large marshmallows in a microwave safe bowl. Microwave in about 30 second intervels till melted. 


It should look like this when melted. It stirs easily.


Pour in 1/4 cup evaporated milk and stir. Set aside.


In a different bowl, pour in one cup whipping cream. Dump some powdered sugar in and beat with a hand mixer. 


Continue to beat till it thickens up to whipped cream:-)


Dump thickened whip cream into marshmallow mixture and stir till combined. 


Peel and cut up a few peaches. Start with maybe 4. You can always add more later if needed!


Plop those peaches right on top of your marshmallow/creme mixture and gently fold them in. 


Pour into a premade graham cracker pie crust. I might have filled mine a little too full:-)


Cover and put in freezer for at least a couple hours. Preferably longer. 


Take out five minutes before eating to let it soften up a tiny bit. Cut up fresh peaches for garnish if desired and a little spinkling of powdered sugar might just beautify it:-) Enjoy!!!
